Lazy girl apple pastry recipe

Few days ago, I posted my December Daily page 2 with the Lazy Girl Apple Pastry, some of you showed interest so I am going to share the Lazy Girl Recipe, LOL!


I am super picky when it comes to baked stuff, I like it when it is fresh, and never like to eat pastry that is more than a day old, so I like to bake in small quantity, that way, I don't have to eat overnight stuff. But we all know it is a lot of work just to bake, the preparation, wash, cut, bake and then wash again, so I come up with this Lazy Girl Apple Pastry, which I like it a lot and it takes so little time.

I get the puff pastry from the grocery store like this one


It has 2 sheets in there, I took out just one to defrost, and store the other sheet in the freezer until I need it. It takes about an hour to taw. Each sheet comes in 3 folds, I cut each fold into 3 squares, that gives me 9 square pieces.


Here's the instruction -

1. Preheat oven to 400F (I always get the preparation done before the oven even reaches 400, that is how fast and easy this is)

2. I used a non-stick baking tray, however, I still use parchment paper before I place my pastry squares onto it, because sometime the sugar will burn and stick on the baking tray a little, not a lot of work to wash since it is non-stick, but by using the parchment paper, you can just toss the paper away, don't even need to wash the trey, LOL.

3. Spread a tiny bit of apricot jelly on the pastry, I used this one.


4. Next is to place the sliced apple pieces on your pastry, I used 3 - 4 slices, you can pretty much any kind of fruits you want.

5.  Spread some butter and apricot jelly on top of the apple slices again.

6. Last step is add a pinch of sugar and cinnamon.

By this time, my oven is still around the 300s, I will have to wait a little while for the oven to get up to 400F.

Bake for 15 minutes, and then enjoy!


see that little bit of jelly and burn sugar on the paper, that is the reason why I used parchment paper so I just wipe my trey off with a wet tower, is that simple.

If you are like me, small family, just 2 of us at home and don't eat a lot, you can keep the rest of the cut pastry in the fridge so you don't need to taw them the next day, sometimes in the afternoon, it could be a good afternoon snack to go with my tea, that is easy and fast enough to make.

Yay! Thanks for sharing! I was just thinking you would share a recipe, but the photos are a super added bonus...I'm such a visual person. Can't wait to try this. :) (P.S. I just have to let you know that I love your reindeer card on the sidebar that you won top 3 at jingle bells. I look at it every time I visit. I can't get over his giant sparkly nose.)

I've made this kind of pastry before as well. It is simple and very delicious. I've used pears as well and a little goat cheese sprinkled in too! Can't go wrong with this lovely recipe. I really like your December Daily post of the pictures. So lovely.

Boy does that look yummy.. I am definitely going to have to try this one. I use those puff pastry's to make chicken pot pies so I always have them in my freezer.

Hope all is well with you my friend. It has been a bit chilly here. But it is suppose to warm up in the next day or two. We only have 3 other campers here right now. I guess December not a busy month for camping. :)

Oh yummers I must try this. I have some pastry in my freezer right now and apples in the fridge, no apricot jelly though! Do have some black current jelly, but that might overpower everything. Thanks for sharing!
